Easy Chicken Parmesan

Makes: 6 servings
Serving size: 1/6 recipe

Ingredients:
2 cups spaghetti sauce
6 tbsp grated Parmesan cheese, divided
6 (6 or 8 oz) boneless skinless chicken breast halves
1 1/2 cups shredded part-skim mozzarella cheese

Preparation:
Preheat oven to 375 F.
Pour sauce into 13x9-inch baking dish. Carefully stir in 4 Tbsp. (1/4 cup) of the Parmesan cheese.
Add chicken; turn over to evenly coat both sides with sauce.
Cover with foil.
Bake 30 minutes.
Uncover.Top with mozzarella cheese and remaining 2 Tbsp. Parmesan cheese; continue baking 5 minutes or until chicken is cooked through and cheese is melted.

This dish is really yummy and easy to make. It is also really cheesy (and I loove cheese).

I had to come out of lurking to tell you what an inspiration you are. My weight scenario is alot like yours. Once upon a time, I was 120 & didn't even realize how cool things were! Now I am 185 (actually got myself out of the 200+ range) & I cannot seem to move myself out of this # range. I read your blog every day & you make me feel like I can do it, if only I could just get started again!

Don't worry about LAWL closing, you learned all you needed to know from them. I lost my first 50 pounds with LAWL, and could not afford to keep going (because it took me tooooo long to lose those 50). You are a strong & beautiful woman. Just keep doing what you're doing & YOU WILL REACH YOUR GOAL!

Thank you so much! Im glad you came out of lurking. Its nice to know that someone reads and cares about what I write. It is also nice to know that it can be done (as you lost weight without the center). You definitely can do it (now we are doing it together as LAWL closed).

Thanks so much for posting this Heather, Ken loves Chicken parm but I had only made it breaded and pan fried in a little olive oil, healthier than fried in oil but still not "healthy" I'm going to give this way a try, I don't think he ever miss the breading with the right seasonings!!!
